Jollof rice: A popular West African dish with aromatic, tomato-based rice. Often refined with various spices and, depending on the region, with meat or fish.

1. marinate the chicken or fish with salt and pepper and fry in a pan. Set aside.
2. fry the onions, garlic, peppers and chili in a large pan, add the tomato puree and simmer for 5 minutes.
3. add the spices, rice, chicken stock and the sautéed chicken or fish. Mix everything well.
4 Simmer on a low heat until the rice is cooked and the liquid has been absorbed, about 30 minutes.
5 Stir in the roasted vegetables and serve.
